Cowboy Bebop is quite good, and the only anime where English dubs do it justice.
Rurouni Kenshin, albeit a bit long, is an incredible anime.
Chobits - a nice romance anime.
Kare Kano - a much nicer romance anime.
Saikano - a shocking anime. Perhaps the most tear-envoking anime to date, with the exception of Kimi Ga Nozomu Eien.
Azumanga Daioh - A mostly comedy, tiny bit slice of life anime. No plot, but hilarious.

Gunslinger Girls - Little girls who kill people for a living. A very well done anime, and very original.
Great Teacher Onizuka - Perhaps one of the funniest anime I have watched. Brilliant.
Maison Ikkoku - A very long romance anime, but well worth the time spent.
Mononoke Hime (a.k.a Princess Mononoke) - A classic Studio Ghibli movie.
Maburaho - Nice magic / romance anime.

FLCL, or Fooly Cooly, or Furi Kuri: Largely comedy, with a good bit of action, and some good lessons too. One of the best sound tracks, IMO. This show first got me hooked on anime.
Berserk: It may have ended without closure, but its still a great show. Excellent characters. While theres a lot of violence, most of it has reason. And if ya want the rest of the story, ya can pick up the manga.
Bokusatsu Tenshi Dokuro-chan: Not the best, and a bit ecchi, but the premise is awesome. An angel from the future who keeps "accidentally" killing people with a spiked bat, and then having to bring them back to life.
